Peter Lehmann - Masters Botrytis Semillon 2016

Australia - The Barossa Valley, with its warm lingering summers, is a natural home for the noble rot, Botrytis Cinera. What can be a grapegrowers curse is masterfully crafted in this luscious wine that shows the beauty and diversity of the Semillon grape. The history of this wine dates back to winemaker Andrew Wigan's visit to the iconic Chateau d'Yquem in 1981, home to the world's greatest sweet wine. His time in their vineyards and winery inspired him to recreate the style in the Barossa. A beautiful bright gold colour which will deepen with bottle age. It has wonderful tropical fruit aromas with just a hint of citrus. It is a truly harmonious wine with a delicious lusciousness on the middle palate counterbalanced by tantalizingly complex acidity, the hallmark of botrytis wine. With creamy blue vein or washed rind cheeses. A delicious accompaniment for fruit flans, warm winter puddings and great with scrambled eggs for a luxurious brunch. Can be cellared for 20 plus years.

Torres - Floralis Moscatel Oro

Spain - Since 1946 the Torres family has been making Floralis-Moscatel Oro, one of the Mediterranean's most characteristic dessert wines, nectar with an unmistakable floral perfume and a voluptuous and sensual palate. This sweet wine is made from one of the Mediterranean's most classical stocks. The Greeks called it Anathelicon Moschaton and the Romans Apianae, because it attracts the bees that, from the Muscat flowers, make the delicious nectar of their honey. Moscatel has an unmistakable aromatic perspective that is highly characteristic of its variety, with seductive floral perfumes (rose, geranium, lemon verbena). On the mouth it is voluptuous, concentrated yet light, full and with a delicate sensuality. Ideal as an aperitif or dessert wine. Serve at 8deg C

Torres Chile - Nectaria Vendimia Tardia Riesling 2010

Chile - Our Vendimia Tardia is a wine made from Riesling grapes, originating from the Fundo San Francisco, in Molina, where they followed a process of over-ripening until they were harvested. Noble rot, also known as Botrytis, is the cause of this relative enrichment of the must in natural sugars. Over a period of weeks, Botrytis, or noble rot, sun dried and ennobled these grapes. This means that the wine made from them has accquired a beautiful old-gold colour, with an elegant and spirituous aroma. Dense and intriguing on the palate with a myriad of flavours reminiscent of honey, flowers and spices. The sweetness of Chile is concentrated into this exclusive and pioneering natural sweet wine, whose production is highly limited. Especially made for accompanying sweets and desserts.

Keo - Commandaria St John

Cyprus - The historical sweet desert wine. Harvested grapes are spread out in the sun to dry until their sugar density reaches 19-23 Baume. Once achieved, the grapes are crushed and fermented until the process stops naturally due to the high sugar content. The must is then aged in oak barrels for a minimum of two years. Similar to the solera system, the barrels are never completely emptied. New juice is added to the barrel containing old juice and the process begins again. St. John Commandaria is a sweet wine with a powerful bouquet filled with dried fruits, spices and oak. It is luscious and full-bodied.

Prunotto - Moscato D'Asti 2017

Italy - An intense straw yellow in colour, the wine shows a musky nose with additional notes of hawthorn and acacia honey. On the palate it is full, dense, vigorous, and elegant with a fresh, balanced, and pleasurable finish. The Moscato grapes were quite healthy, with an excellent concentration of sugars, acidity, and fragrance. Picked into small packing cases, they were first lightly crushed before pressing and then remained in the press for a brief period to favour the absorption of the aromas by the must. A clean must was obtained by a natural static settling which eliminated the impurities.

Hollick - The Nectar Botrytis Riesling 2015

Australia - Appearance: Golden straw. Aromas: Lifted aromas of citrus and honey. Flavours: A deliciously rich palate filled with stonefruit and citrus giving way to a crisp acidic backbone culminating in a refreshingly pleasant finish. The Nectar is made from Coonawarra Riesling from the Wilgha vineyard. The summer of 2015 was a classic with warm days and cool nights due to the upwelling of deep cold water off the coast of the region. This allowed the fruit to ripen and develop intense fruit flavours. Hanging on the vines until late in the season, the harvest was delayed until the botrytis had crept its way throughout the entire vineyard. Slowly dehydrating the berries, it produced the concentrated, incredibly sweet and flavourful fruit required for making a wine of this style. The fruit was carefully selected and harvested by hand to ensure the integrity of the wine. Gentle pressing and a long cool fermentation retained the vibrant freshness of flavours before the wine was clarified, stabilised and bottled.

France - The soil is composed of soft limestone with sandstone zones and sandy molasses. Only the ripe grapes are harvested. The harvesting of each plot requires several pickings.
