Torres Chile - Santa Digna Estelado Rose NV

Chile - Nearly 500 years ago, the first grapevine in Chilean history arrived, brought by brave men who struggled across rivers and mountains. This was a special vine: in Spain known as Listan Negro, in the colonies of the new world it was called Mision, and in Chile it would be known as 'Pais'. This varietal is cultivated in dry zones with humility, hard work, and dedication generally by small winegrowers who have passed their land from fathers to sons over several generations. In 1850 the first French vines were introduced to Chile, leaving the 'Pais' grape aside and later forgotten in time, with an uncertain future. The rescue of Chile's oldest grape varietal has produced Santa Digna Estelado, a unique sparkling wine, 100% Chilean, a reward for the land and its people. Pale rose colour, with fine and persistent bubbles. In the aroma, notes of fruit (red fruits and citrics) predominate. On the 0palate, fresh, lively, and genuine, characteristic of the ancestral varietal Pais. Santa Digna Estelado is made using the traditional method with the second fermentation in the bottle. The first sparkling rose made with the 'Pais' grape has a personality of its own.

Domaine des Baumard - Carte Turquoise, Cremant de Loire Blanc NV

France - Light straw colour, mineral aromas with notes of apple and peach on the nose. Lemon, apple and pink grapefruit on the palate. The mousse is elegant and refined and there is plenty of crisp acidity. Crisp and refreshing, vibrant and delicate, this sparkling wine is worth going out of your way to try. The finish is long and dry with attractive biscuity notes. The Baumard approach to viticulture is a notable one, and it does make it easy to spot the Baumard vines in any given appellation. They are trained in a fashion Baumard describe as vignes hautes et larges (sometimes abbreviated to VHL); the larges refers to the distance between the vines, a remarkable 3 metres between the rows and 0.8 metres between each vine, whereas the hautes refers to the high trellising system employed, taking the vines to a height of more than 2 metres, the object being to obtain a large surface area of foliage. During the vegetative period they see limited leaf-thinning along their base, but otherwise there is little intervention at this time, not even topping-off of the upper shoots as they reach for the sky above. Between the rows, the soil is alternatively ploughed and grassed over, a methodology the Baumards have been following for well over 40 years. The harvest is manual, and the fruit transported in small plastic cages to minimise damage. The fruit is hand harvest to ensure that only the best quality is used. On arrival at the winery, it is placed in a pneumatic press but only the first press wine is used. The first fermentation is in temperature controlled tanks with Chenin, Cabernet Franc and Chardonnay being fermented separately. After blending re-fermentation takes place in the bottle and the wine is then aged on its lees for over a year. Grape varieties: Cabernet Franc 50%, Chenin Blanc 25%, Chardonnay 25%.

This varietal wine is a perennial favourite and often sells faster than Langlois can produce it, although they never compromise on quality to release early. The flavours are of pure raspberry and blackcurrant with a freshness that leaves a good many more illustrious sparkling Roses standing. The Cremant de Loire Appellation is among the most demanding sparkling wine appellations in France (far more stringent than, for example Saumur or Vouvray Brut, for the former of which the Langlois wines would naturally qualify). Under the auspices of Bollinger, Langlois has further augmented the regulations to equal, and even exceed, those of Champagne: A majority of chalky soils, very favourable to elegant wines. Hand picking in small baskets in order to collect only the best grapes. 150 kg of grapes for 100 litres of must. A minimum maturing of 12 months in bottle. Selection of the grapes on the best terroirs of the area of Saumur. Total control of the pressing on a pneumatic press. Fermentation in small vats, allowing precise control. A minimum maturing of 24 months in bottle, or more, depending on the cuvee. Don't be a Scrooge and crack open a dirt-cheap pink hoping the hue will mask its faults. It won't. Italy - Colour: A luminous straw yellow with a numerous creamy effervescence. Nose: Yellow persimmon and walnut apple complex, the oxidation in the glass liberates perfumes of sambuco flower, basil, light fragrant and biscuity nuances. Mouth: On the palate the effervescence expresses all its creaminess. Soft with a balance between the acidic components an almondy finish. The white Charmat Sebastian wine takes its name from the founder of the Maiolo Farmhouse, the Notary Sebastian Maiolo, commemorated on the keystone of the door of the manor house. The early harvesting of the grapes, ideal for forming the base of a sparkling wine with more acidity, allows them to obtain the structure of a wine suitable for a second fermentation in its own autoclaves for 6 months.
