Louis Roederer - Brut Rose 2013

France - On the palate, the wine is soft and smooth yet also piercingly fresh. A well-integrated wine with excellent body, pleasant freshness, a long length and delicate mouthfeel. The body softens gradually and coats the palate with a velvety smoothness underpinned by a pleasant salinity and delicate hints of tannin from the flesh and skins of the Pinot Noir grape. The finish is fresh, long and very persistent. It is a fantastic pairing with fish such as salmon and tuna; meat including lamb, veal, guinea fowl, wood pigeon and pheasant; and also soft cheeses such as Chaource and Brillat-Savarin. It can also be served with red fruit-based desserts that are less sweet, such as a red fruit zabaglione or a red fruit gratin.

Sherry

Hidalgo - Amontillado Napoleon VORS

Spain - Produced according to the traditional methods. The ageing method used for all sherries is known as the solera system which consists of a continuous blending of young sherries with older ones resulting in a sherry of consistent quality. Matured in solera, in casks of American oak in the sherry town of Sanlucar de Barrameda. The maturation is first 'biological', i.e. under a veil of yeast or flor followed by the 'oxidative' process, which begins as the yeast dies off due to lack of nutrients available in the Sherry. Then follows several (over thirty years) of ageing in cask, to give a dry, complex wine.Wines of such age are designated VORS, (Very Old Rare Sherry). Aroma: Intensely rich hazelnut, beeswax. Taste: Dry, very nutty, full bodied. A pungent aperitif, but also great with many foods: Tapas, soup, dry cheeses and even beef.

Dessert Wine

Hugel et Fils - Vendange Tardive Gewurztraminer 2007

France - A perfect, attractive colour, deep golden straw yellow, with youthful pale green hints, an excellent viscosity, rich and luscious on the glass, nicely bright and quite elegant in appearance. Wide open bouquet, attractively frank and very perfumed, with restrained fruit and floral nuances, concentrated but very elegant and refined: rose, mayflower, jasmine, orange blossom, lavender honey, lychee and mango. On the palate, this is a sweet wine, magnificently well balanced, that softly and delicately coats the whole mouth with an explosion of flavours and perfumes. Suave, silky and utterly charming, it is an open invitation to frequent tasting. Iit is already very enjoyable, but will continue to develop for a further 10 to 15 years. A remarkable liqueur-like wine to savour just on its own, or to accompany foie-gras, blue cheeses, non-chocolate desserts, fruit tarts. Tasting notes by Serge Dubs, World's Best Sommelier 1989

Taittinger - Brut Vintage 2012

France - Taittinger Brut Millesime is a pale radiant yellow with an abundant of fine bubbles rising to form a delicate persistent necklace. On the palate, the fruity attack is sublimely fresh and rich. The mid-palate is balanced, structured and smooth, releasing flavours of sugared pink grapefruit. The exceptional intensity of the finish is long, generous and complex. Although still young, Taittinger Brut Millesime already possesses a remarkable balance between delicacy, elegance and finesse. Dean Hewitson - Old Garden Mourvedre 2010

Australia - Old Garden was picked at optimum phenological ripeness. After fermentation approaching three weeks on skins the wine was subsequently matured in 100% new French barriques for 18 months. These complex oak characters help soften tannins while compliment the terroir-based flavour profile of black, glazed cherries, dark chocolate, mocha and even orange peel that manifests itself each year in this single vineyard wine. This demonstrates the remarkable nature of the vineyard - a wine of such iconic distinctiveness. The 2010 Old Garden is already a classic and speaks of its rich tradition and inheritance. This wine illustrates our belief that great wine is expression of single vineyard and vintage. Limited stock.

Laurent Perrier - Vintage 2007

France - Appearance: A light yellow with delicate beading. Aroma: A delicate, subtle nose with aromas of fresh pineapple, dried apricots and almonds. Taste: A very pleasant, rounded attack, followed by a marked sense of balance, with a lively finish offering hints of white peach and mirabelle. The Vintage 2006 pairs harmoniously with fish in sauce, while its roundness and delicacy will prolong your tasting pleasure in the company of poultry or other white meats. Laurent-Perrier is selective when declaring vintages - rarely declaring them and only in the very best years with a unique character. Thus the Vintage 2006 is an exceptional wine and while it maintains the signature style of the House's wines, it reflects the unique characteristics of the vintage year.
