Buckfast - Tonic Wine

England - The recipe for the Tonic wine is attributed to the original French monks who settled at Buckfast Abbey in the 1880's. Base wines from Spain, known as mistellas, were imported and to these were added the tonic ingredients according to the old recipe. By the 1920's 1400 bottles were sold annually, 500 from Buckfast and the remainder by post. In 1927 a London wine merchant was visiting the Abbey, and in conversation with the Abbot, Anscar Vonnier, it was decided that the monks would continue to make the Tonic wine with the distribution and sale to be carried out by a separate marketing company. In order to broaden its appeal the Tonic was changed slightly from a rather severe patent medicine to a smoother, more mature medicated wine. Having taken on the marketing of Buckfast the distributing company adopted a reserved promotional approach resulting in the widespread appreciation of the product nationally and internationally. In modern times it continues to be made by the monks of Buckfast Abbey along the same lines and according to the same basic recipe as used in the very early days. The main difficulty lies in the successful addition of inert substances to a base wine - a living and natural entity. The selection of the base wine is thus of prime importance. Today the base mistellas come from France providing the ideal medium for the skill and expertise of the monks to produce a finished product round and mature to the most discerning of tastes.

The honey which is used in the production of Lindisfarne Mead is drawn from the four corners of the world and here, on the island, it is vatted with fermented grape juice, honey, herbs, and the pure natural water of an artesian well and fortified with fine spirits to produce this unique drink. Lindisfarne Mead is produced exclusively on the Holy Island of Lindisfarne, situated off the Northumbrian Coast. This island is the Cradle of Christianity in England, for in the year 634 A.D., Oswald, King of Northumberland, brought St. Aidan from the island of Iona to establish a monastery here. The motifs illuminating our labels are drawn from Bishop Eadfrith's magnificient Lindisfarne Gospels written circa 700 AD., which, with the Books of Durrow and Kells, remain a living testimony to the devotion and love of beauty and culture which existed in those distant times.

Chapel Down - Flint Dry 2017

England - An aromatic wine with aromas of green apple, pear and kiwi. The palate is zesty and fresh which leads to a smooth and refreshing finish. A great alternative to aromatic white wines, such as Sauvignon Blanc or Pinot Grigio. A blend of chardonnay, Bacchus, Huxelrebe, Pinot Blanc, Reichensteiner, Muller Thurgau and Pinot Noir. Each variety was whole-bunch pressed and vinified separately at cool temperatures, 50% of the blend underwent malolactic fermentation before the wine was blended, clarified and bottled in March 2018.

Balfour 1503 Brut NV, England

UK - Superb quality English sparkling wine from the Hush Heath Estate in Kent, which was planted with vines in 2002. Winemakers Owen Elias and Victoria Ash have been making wine at the estate since 2010, and create 1503 Brut using traditional secondary fermentation in bottle. Refined in structure, with a finely beaded mousse and pale pink highlights. Tightly structured, combining crisp apple and citrus fruit with nuances of pepper and thyme. Enjoy immediately. Best with light seafood.

Balfour 1503 Rose NV, England

UK - This English sparkling rose has been made using the traditional Champagne method and a Pinot-dominant blend. The grapes are grown on the Hush Heath Estate near Tonbridge in Kent. The estate dates from 1503 and is the home of the Balfour-Lynn family. A delicate and inviting rose petal pink, with a finely beaded sparkle. A lively pink grapefruit character is accented with defined notes of wild strawberry and a subtle herbaceousness. The winemaker suggests this as the perfect foil for venison sausages.

England - Made from a blend of 95% Auxerrois Blanc (a cross between Gouais Blanc and Pinot Noir sharing the ancestry of Chardonnay) and 5% Rulander grapes (a German synonym for Pinot Gris). It is crafted using the traditional bottle fermentation method and aged for approximately four years on its lees. A classically structured wine that lasts on the palate. Equally delightful to drink either on its own or with food. The nose has fragrant charm orange blossom the palate starts with fresh fruit lime and slightly richer grapefruit.
